Salmon crumble.

I serve it cold and we enjoyed it, specially with the heat in France at this moment…

You could use an other fish of course. Some do not like that, but adding some spicy sauce is a very nice version as well.

For 4 people:

garnish:

150 g of Salmon

2 soup spoons of Dijon mustard

2 new oignons

chive

juice of 1 lemon

2 soup spoons of olive oil

salt and pepper

base:

2 soup spoons of Dijon mustard

40 g of flour

40 gr of butter (melted)

40 g of hazelnut powder

salt

When the butter is melted, pour all the ingredients in a bowl and mix them.

Pre heat the oven at 180 C.

Display this, equal quantity in four metal circles, and bake them for 15 to 20 minutes.

Steam cook the Salmon.

In a bowl, mix the lemon juice with the chives. Add the mustard and the Olive oil. Chisel the oignons and add them as well.

Crumble and add the Salmon. I usually add as well the lemon zests.

Fill the circles , on top of the bases.

Save in the fridge for two hours, it is now ready to be served.
