You can use Schrimps or the Jumbo Schrimps. I usually slice the Jumbo into two in the lendth. If you cannot find the flat peas, use green beans. Really easy to make.
This salad could be prepared earlier and that would save your time for your dinner…
for 4 people:
500 gr of flat peas
200 gr of Schrimps (cooked and cleaned)
1 organic lemon
! soup spoon of olive oil
! soup spoon of soy sauce
some chive, salt and pepper.
Clean the peas, steam boil them for about 8 minutes. Keep them a little crispy. Drain them, rince and drain them again. Dry them with some paper towels.
Some preparations…Rince and dry the Schrimps. Zester the lemon and press the juice in a bowl. Chisel the shalot and the chive.
In a bowl, mix the oil with the soy sauce, chive and the shalot with a drop of warm water. Add salt and pepper. Wisk this preparation.
Spread the peas on your plates, add the Schrimps, coat with the sauce and serve room temperature..
A nice, refreshing and greedy salad for when you entertain.
